Shepherd's Pie
My comfort food craving for Irish food was met with this recipe! Not only was the Shepherd's Pie pleasing to the eye, but each scoop of this dish was truly delicious The extra cheddar cheese melted on top added a nice dimension to the pie.
The only thing i wished I did was putting a touch of butter in the mashed potatoes before putting them in on top of the Shepherd's Pie.

Turkey Mushroom and Sage Soup
This soup is just perfect for a chilly Friday Night! The texture of the soup is creamy and the blend of sauteed mushrooms, butter and sage (which was cooked in a skillet) really complimented the turkey soup. This definitely will become a favorite soup of mine to do during the winter time.
The original recipe uses chicken stock, but I used turkey stock instead which did not overpower the soup with turkey flavor and did not effect the soup's creaminess. We also asked our neighborhood butcher to cut us a thick cut of baked Turkey so that we could cut the Turkey into bite-sized cubes.

Meatball and Mashed Potatoes
I can honestly say that this is the first time that I ever had mashed potatoes and meatballs in one meal. This meal had an old-fashion feel to it with the seasoned meatballs tasting similar to meatloaf along with mashed potatoes and gravy.
I did change a few things with the recipe. The recipe called for frozen meatballs, but i made my own meatballs with premium ground beef seasoned with rosemary, thyme, garlic powder, salt, pepper, breadcrumbs and an egg to keep the ingredients together. The recipe called for Au Jus sauce, but the only Au Jus sauce I could find at the market came in gravy packets noting some concerning ingredients (example: Partially Hydrogenated oil, etc.), so I made homemade gravy with flour, corn starch, butter and organic beef stock.
With beefy meatballs, crunchy bell pepper, buttery homemade mashed potatoes and buttermilk biscuits, this meal made me reminisce about the homemade meals that I used to enjoy growing up which made me enjoy this meal even more. My advice is to try this meal with sparkling grape juice from Concord Grapes.

This dish was a very easy-to-follow recipe that did not take long to make (30 minutes overall cook time) and very tasty. The sweet juicy sausage is my favorite component along with the butter on top of the rice. The spice of the Cajun seasoning was not overpowering and did help bring out the sweetness of the peppers and the citric taste of the stewed tomatoes.
In my opinion, very healthy meal full of vegetables, nice lean protein and great kick of spice. I'm glad I choose the sweet sausage because if I'd have chosen mild or spice, the Jambalaya would have been way to spicy (those that love there food spicy should definitly get spicy sausage). Every forkful of this dish was an absolute pleasure to taste.

Southwest Nacho Casserole
Sometimes for dinner all I want is snack food and this was a good recipe for that day. I was recently missing New Mexico, and this recipe brought back some wonderful memories of authentic Mexican food. My favorite part of this meal was the gooey cheese melted into the zesty ground beef which was amazingly flavorful. Every now and then, a nice fresh tomato and olive comes in and adds a refreshing dimension to the casserole's overall flavor.
This isn't a "diet friendly" meal by any means, but having lean ground beef and reduced fat cheese helped a bit. Great "south of the border" flare with the tomatoes, green chilies and cheesy beef is always a winner. Home made strawberry/watermelon fresca juice would be ideal to have along with this meal.

Salmon and Leek Soup
Soup to me is one of the easiest things to cook. Besides waiting for the potato to cook in the fish stock, the overall cook time for the soup was not bad. The cream was a wonderful addition to the leeks and salmon and I loved the texture of the combination.
This was a very simple soup that upon appearance looks like Clam Chowder, but the taste of the soup was surprisingly delightful. Salmon can be a bit pricey at times, but this soup can serve up to 4 people which makes this meal a plus in both quantity and quality. If you love salmon meals, this could be a nice meal for you to try.

Chicken and Dumpling Soup
This is one of my ALL TIME favorite meals. Although I've never shredded cooked chicken before, I love the texture of shredded chicken for being very easy to chew. I liked the flavor the leek added because I never had leek with chicken and dumplings before. The only problem was making the dumplings. When I dropped them into the soup, they were so big and wouldn't cook properly, so I tried breaking them up, and it worked, but the dumplings were super small, and hard to find.
I decided instead of potatoes, I used mushrooms to add a "mushroom flavor" to the soup which went surprisingly well. I figured with the dumplings, it would be too much starch, so substituting potato w/ mushrooms was a good call.
Overall, a wonderful meal with moist shredded chicken, complimented with vegetables and supremely moist dumplings (when found LOL). I would definitely do this meal again.

Easy Italian Bake
Back in my college town, there was an Italian Restaurant I went to where I had a penne meal that was bland and uninteresting and vowed to myself that I would find an Italian recipe to make up for it... Finally, I found the make up recipe!!!
This is such a satisfying "stick to your ribs meal" that does not take long to make (overall cook time was 29 minutes). This recipe took an ordinary penne pasta with meat sauce meal and livened it up by baking the pasta and meat sauce together with melted/creamy mozzarella on top!
Garlic has become my favorite element in every Italian dish that I make and decided to add two cloves of Garlic to the meal (it also helps that you live near Gilroy, THE Garlic capital of the world). Next time in addition to the garlic, I would also toss in mushrooms and onions.

It rained ALL weekend long, so I felt it was a perfect time to line up some soup recipes for the chilly week ahead. This soup looked and smelled wonderful and was a nice change of pace from the cheese bacon soup I recently had.
I did change two things from the original recipe. The recipe originally called for sunflower oil, but i figured it would taste just as good with extra virgin olive oil. The recipe also called for red onion, but I prefer the taste of white onion which was a good choice.
The soup was super tasty and very healthy. My favorite part was the way the olive oil worked well with the broth and the crunch of the zucchini. Next time, I would serve some rolls with roasted garlic on top to go along with this soup :).

Tater Tot Casserole
This recipe was very easy to make / easy to follow, reminding me a little bit of the Shephard's Pie recipe I did before, but tater tots were in the place of mashed potatoes. The tater tots fell apart while baking in the milk, chicken stock and flour mixture, but surprisingly the crispness of the tater tots remained noticeable.
The only thing I changed regarding the recipe was the way to cook the casserole. The website suggested two 3 quart dishes, or a 9 by 13 pan, but I found using a 2 quart casserole dish did just fine.
Overall, The dish was deliciously creamy and definitely worth doing again.

Soft Tacos with Fish
Crispy, loaded with flavor, and if I were to have this meal again, I'd have it on the beach with sparkling lemonade. Definitely a THUMBS UP!
Baked chicken with vegetables
This is a meal my mother introduced to me growing up and although my mother is states away, cooking this meal was like she was in the kitchen with me. The mixture of sweet potatoes and onions added a diverse flavor to the moist baked chicken. For this, I give my mother and her baked chicken a definite THUMBS UP!
Red Beans and Rice with Corn Bread
This meal was a great way to celebrate Mardi Gras week. What really brought out the flavors of the meal was the Andouille sausage, garlic, and bell peppers, making this dish a THUMBS UP!
Lemon Salmon Burgers
These salmon burgers were surprisingly crispy, tasting like italian sausage. What really brought out the flavors of the salmon was the fresh parsley, fresh lemon juice, and Italian seasonings, making this meal a THUMBS UP.
Lentil and Veggie Shepards Pie
This was a much healthier version of the classic Irish Shepard's Pie. Originally the recipe called for "parsnips", however I do not like Parsnips, so I used some leftover celery from a previous recipe. I loved the crispy texture of the kale with the softness of the lentils mixed with the deep flavors of the tomatoes, making this meal a THUMBS UP.
Italian Wedding Soup.
The Meatballs were a bit big, I still had to cut them in half. But they were very tasty, juicy meatballs. I was very excited to finally make the little pieces of pastas(also known as couscous) which have always been my favorite part of Italian Wedding soup. I used canned spinach instead of fresh, and I was a bit nervous at first, but it didnt taste any different, and some of the spinach liquid flavored the broth, which tasted a wonderful addition to the soup. My favorite part of eating this soup was biting into both the zucchini and the meatball, making the best flavor combination, making this a THUMBS UP!
Chicken and Black Bean Burritos
I actually used two recipes to make one wonderfully flavorful burrito. I used mexican flavored rice from one recipe and the chicken, seasonings, and vegetables from another recipe, and it turned out fantastic. The sweet bell pepper and sour cream made a nice contrast to the spice of the rice, making this flavorful popular dish a THUMBS UP!

Vegetarian Chili
Wonderful diversity of spices. Each vegetable adds a different texture with every bite. The book suggested homemade honey corn muffins from their book, however, I could not find all the ingredients. Honey cornbread muffin mix from a box tastes just fine. I've never had chili with honey cornbread muffins, and now it's my new favorite combination and a definite THUMBS UP!
NOTE--> I did not have a couple ingredients such as fire roasted tomatoes or paprika spice, but to me the chili was still yummy.

Rosemary-Orange Pork Chops and Lemon-Butter"broccoli"
Very nice blend of spices. The red pepper flakes added a great warmth to the dish. I would add a bit less lemon juice on the broccoli then the recipe called for next time. The orange, lemon, parsley and rosemary made this a perfect spring/Easter meal, and a definite THUMBS UP!

Egg Breakfast Sandwhich
This recipe had everything I already keep in my fridge. The way the eggs were cooked gave them a great crispiness around the edges. Interestingly there was no milk in the eggs, just egg whites and whole eggs.. Seasoned very well, along with the ham, making this a THUMBS UP.

Chicken sauteed in coconut milk
Lately I've really been interested in cooking from different cultures. Recently one of my family members just went on safari to Africa. Well, this cookbook helped me feel like i'd traveled there in my own kitchen! I absolutely loved the neutral flavors of this meal. These ingredients I cook with quite often,(except for the coconut milk), but they were done in a different way. The coconut milk got nice and thick, and went very well with the sauteed vegetables. The raw tomato was my favorite part, adding a brightness to the meal, making this meal a THUMBS UP!
NOTE--> I do not enjoy spicy food, but if you enjoy it, the cookbook said two red chilies diced would be optional.

Ratatouille with Poached eggs and buttered croutons
I didn't do the croutons, instead I did the butter for the croutons as instructed, and dipped the bread into the butter(wonderful!) I also did a switch, instead of using cheese in the croutons, I added tons of cheese on top of the vegetables before poaching the eggs.
Everything that goes wonderful with egg, including my favorite paring with eggs, tomatoes and eggplant, the Herbs De Provence was so aromatic and flavored the dish so well making this a THUMBS UP!

Classic Roast Chicken
The skin got wonderfully crispy, and the chicken was super moist. The carrots got very soft and the onions got soft as well, except for some parts that got crispy(delightful!!). The simple classic flavors of this basic chicken makes it a thumbs up!
NOTE--> This cookbook had absolutely no pictures, but everything sounds wonderful. The recipes being directly from some of my favorite movies(and books), are so fun, so I will do some more from this cookbook to see what the recipes turn out like:).

Carrot, Apple, and Celery Soup
I've never tried this combination in soup before. I think it would have been fine without the "tomato paste". In my opinion the paste made the soup a little to acidic, making this soup a THUMBS DOWN.

I tried a macaroni and cheese from scratch before and it turned out horrible(before my blog). Needless to say I was a little hesitant to try again. This recipe was such a success! It was so unbelievably creamy, pure comfort food, making this a THUMBS UP!
NOTE---> Im sure other meats like chicken or turkey would work just as fine here. ALSO, this recipe asked for "chicken bouillon cubes", but I felt it wasn't necessary to add them. The food was just fine, but you can add them if you have some on hand.

Linguini with Sicilian Tuna and Marinara
Such a fun dish, (cooking with cans), and so EASY! The acidity of the tomatoes went wonderfully with the saltiness of the tuna complimenting each other well, making this a THUMBS UP!
NOTE--> I really don't like spicy food, but just a sprinkle of the red pepper flakes worked well for me. If you like your food with a little zing or more spice, add a bit more;).

Slow Cooker Pot Roast and Vegetables
The meat was overcooked, and a bit dry on the inside, the gravy helped a little bit, but not quite enough. I wish there would have been more flavors like garlic. The vegetables got all the broth flavor, making them just taste like the broth and not the vegetables, sadly making this meal a THUMBS DOWN.
Shrimp and Sausage Gumbo
I'm not sure about you, but any time "Andoullie sausage" is frying, Im starving! I love this sausage! This recipe was so incredibly easy to make, with tons of healthy olive oil and veggies and shrimp.. This dish tastes so complex, and brings you to New Orleans without the plane ticket, making this flavorful dish a THUMBS UP!
NOTE: The rice is a bit brown in color because I cooked it in some leftover "vegetable broth". Also (having lived in Mississippy for a bit,) the recipe suggested scallions or cilantro, but I've always found "butter!" to be a garnish in the south;)!

Hot Chocolate for a very Blusterous Day

This pie really hit the spot. Creamy, the vegetables were so soft, and the chicken(poaching it), stayed super moist, making this dish a THUMBS UP!

This is a great twist on a classic favorite. The muffins were very very moist, making it a THUMBS UP!
Tex-Mex Bacon and Eggs Chilaquiles
Wonderful "Breakfast for dinner" dish. Great change up for a nice Mexican dinner, with all the traditional mexican flavors. The egg on tip with the pop of lime, definitely gave this dish a THUMBS UP!
No yeast required Cinnamon Rolls
I don't know anyone who's eyes don't light up at the words "cinnamon rolls". These are so perfect, they don't take a day and a half to make and there what you expect when you bite into them. The Intense cinnamon flavor with the beautiful icing(a little different with the buttermilk, but delightful) make these super easy cinnamon rolls a THUMBS UP!
NOTE-- If you don't have buttermilk a fun tip is to fill the measurement you need with a little less milk, and top it off with white vinegar and let it sit for a few minutes, and mix it together;)!

Beef Stroganoff
This beef stroganoff was super creamy. The Parsley added a wonderful brightness(so don't leave it out!) The garlic powder and cream cheese were super yummy seasonings, making this Beef Stroganoff a THUMBS UP!
NOTE-- Most "Kraft", or "Campbell's" recipes aren't super healthy, but I take the recipe basics and use organic meats and milk, to make them a bit healthier;).

Honey Cookies
Super soft cookies. The brown sugar was super with the honey... These cookies were sweet, but not super sweet, which made them wonderfully THUMBS UP!
Beef Stew
This Stew was superb! It had all my favorite vegetables including, Kale, Green Beans, and Leeks. Even though it was not cooked in a crock pot, the meat was still very tender. The only difference I made to the recipe was seasoning each addition of ingredients lightly with salt and pepper, added a bit more olive oil and beef broth. This beef stew is so healthy and that resumes a THUMBS UP!
--> NOTE, at the last minute I decided to turn the potatoes into "mashed potatoes" to serve underneath the stew, but if you like you can just dice them up into the recipe;).

These are like mini burgers, but for breakfast. There so simple to make, and yet so flavorful, making these tasty breakfast items a THUMBS UP!
BlackForest Cheesecake
This tastes just like the Black Forest Cake but without all the complicated steps. The fillings are so creamy and sweet, making this easy to whip up pie a definite THUMBS UP! The pie keeps very well and tastes even better the next day, so make sure to have leftovers;)

Quick-Mix CornBread
Wonderfully light and flaky, unlike most cornbreads I have pre-made. And nicely sweet, making this recipe a THUMBS UP!
Note-- This is a recipe from a cookbook my Grandmother used back in the 70's, I never had the chance to enjoy her cooking, so I will definitely make more from this cookbook;)!

No Tomato Chili
Nice and zippy, just like a chili should be. The only Chili Sauce I was able to find unfortunately did have a small amount of tomato puree in it.. But this recipe got the consistency of the Chili that I really am picky about, and just the right amount of spice, making this a perfect meal(maybe along with the Quick-Mix Cornbread;), making this a THUMBS UP!

The Basic Madeleine
These were like little cakes.. Very tasty and such a simple flavor.. Making them a THUMBS UP! However, the directions did not make since with the chocolate coating I had meant to put on these, and I had to bake the cookies a bit more then the time indicated on the directions.
Zucchini Bread/Muffins
This Bread was so easy to make, and made the house smell scrumptious! The Bread was super moist, and the Cinnamon didn't overpower the Zucchini taste, making these a THUMBS UP!

Chocolate Chip Pumpkin Spice Pancakes
Thai Style Chicken Pumpkin Soup
Really tasty. Very easy to put together, nothing to complicated during prep work, and the broth was so satisfying.
NOTE-- I would sauté the vegetables just a bit along with the chicken before adding them to the slow cooker, they were a bit crunchy for a soup consistency..

Hearty Lentil and Potato Soup with Leafy Greens
Super hearty(as the title suggests), I love the texture of Lentils and I love Tomatoes and Curry Powder. Actually, all of the ingredients were my favorites. I only added a Carrot,(instead of two Potatoes), and changed the Spice Blend, the recipe suggests Mrs.Dash seasoning, but I had some Egyptian Spice Blend that I havent been able to use much, so I used that. The flavors were all combined well, making this a THUMBS UP!
NOTE--> The Potatoes(and carrot I added) took a bit more then the recipe said to soften, it took about another thirteen minutes, but everything else was wonderful;)

Heavenly Hash Brownie Bites
Super moist! And not incredibly sweet, just enough, making this recipe a definite THUMBS UP!
NOTE--> I did not do the frosting in the recipe, because I was planning to travel with these to somewhere else, so I chose Sprinkles and Pecan Halves, if I had thought a bit more, I'd probably also added some Sweetened Shredded Coconut;)

Roast Turkey Thighs with Stuffing
These Roast Turkey Thighs are incredibly tender and moist, and the skin is perfectly crunchy, the fresh herbs and olive oil make this holiday treat very fresh tasting, not weighing you down in the end;), making this a THUMBS UP!
NOTES--> I couldn't find "Chicken Bouillon Cubes in my grocery store, so I just used Chicken Stock, and it worked just fine. Also most grocery stores now carry these super small Organic Apples, which are the perfect size for "half an Apple";).

Mrs. Sigg's Fresh Pumpkin Pie
I loved that this pie was sweet, but not too rich. My favorite ingredients were the fresh Pumpkin, and the Brown Sugar, which make a nice warmth flavor addition to the pie, making this a THUMBS UP!
NOTE--> When the pie comes out of the oven, it will be pouffy, but as the pie cools down, the filling will settle back down, so don't be alarmed;)

Turkey Potpie With a Cheddar Biscuit Crust
Everything in the filling was super moist and the Thyme really complimented all the ingredients. The Biscuit crust was my favorite part, with little flecks of shredded Cheddar Cheese running through ever bite, making this a THUMBS UP leftover Holiday recipe!
NOTE--> This recipe filled up the casserole dish to the top, so I lined some Aluminum Foil over a large cookie sheet. When the casserole got bubbly, the bubbles spilled a tad over, and the Aluminum Foil helped a lot with clean up!

Loaded Mashed Potato Soup
Soooo Comforting. Such a wonderful way to use up leftover ingredients from other recipes! This soup is so soft on the tongue, and very creamy, except for little bits of super soft potato definitely making this one a THUMBS UP!!!
NOTE--> Because I had some extra Thyme on hand I added a couple sprigs, since Thyme goes so well with Cheese and Potato, but if you don't have any it'll still be perfect!

German Chocolate Cupcakes
Super moist, all the elements complimented each other making this delectable little dessert a THUMBS UP!

Chicken Parmesan with Spaghetti
This one is a keeper. The flavors of the whole wheat bread really enhances the Garlic Powder and Cheeses, making this great meal a THUMBS UP!
NOTE---> I put a bit more cheese then the recipe called for originally;), and there were no complaints! Also the Chicken needed to cook a little longer then the recipe called for(the Breasts were big, test the doneness of the Chicken by cutting a small slit into the thickest part of the Chicken).

Meat Pasties
These Meat Pasties were delicious in every bite. I was a bit nervous, Cinnamon and Lemon??? But none of the flavors disconnected from each other. These little Pasties are a little crunchy if eaten right away, but if you wait overnight, they get softer, and the flavors come more to life(in my opinion), making these little one meal Pasties a THUMBS UP!
Beef and "Guinness" Stew for Kids
The stew broth was more like a "gumbo" broth, really yummy. The Cola and Lemon im guessing acted like the flavors of the "Guinness". This is a definite THUMBS UP!
NOTE--- I had to cook the stew another 30 minutes then the recipe said to fully cook the Potatoes.

Sour Cream Noodle Bake
Layer after layer of exciting deliciousness. Very simple recipe, perfect for a very busy weeknight. The simple flavors really worked great, and would be perfect for both children and adults, making this delicious "Noodle Bake" a THUMBS UP!

Incredibly tender. Boiling the Ham actually kept it moist longer. The sauce was so perfect with the Ham. The warm Spices(Allspice, Clove, and Nutmeg) definitely make this a THUMBS UP!
Erich's Norwegian Meatballs with Wild Swedish Lingonberry Barbecue Sauce
The meatballs themselves were delicious. However the LIngonberry Sauce made the meatballs a little too sweet. The flavors smelled great while cooking, however didn't combine very well flavor wise, making this recipe a THUMBS DOWN.
Pasta e Fegiole
This soup is what some people would call a "pantry meal". Most things are canned and can be stored for long periods of time, (except the Swiss Chard), making this soup a fast, and yet healthy meal. The Beans made the soup nice and creamy, and the simple seasoning really boosted up the simple flavors of the soup, making this a THUMBS UP!
Caprese Salad
This salad was definitely the definition of "less is more". There was hardly any ingredients, yet the salad was very flavorful. The fresh ball of Mozzarella definitely made this dish a THUMBS UP!
NOTE-- I think it's best to get the full ball of Mozzarella (packed in water), instead of the mini balls or the pre-chopped. It'll really highlight the flavor of this salad.

NOTE--> The original recipe called for HAM with the Sausage and Chicken, however, I thought that the same amount(half a pound) of Shrimp would be better(texture wise). Also I used "Cajun Seasoning", instead of Basil, Thyme and Sage(to me it's more authentic).

Served over Mashed Potatoes or Egg Noodles (tossed with a little Butter), these Swedish Meatballs are a delight! The smells as their cooking and the warm spices and thick Gravy make these a definite THUMBS UP!

Tangy heaven. No ingredient is to overpowering. My favorite was the Cappola Ham, and the Roasted Bell Peppers. Tangy, chewy and delicious, a definite THUMBS UP!

Mushroom Steak Sauce
Creamy, Thick and delicious is all I can say about this particular sauce. The Mushrooms gave the already deep Consumme a great Beefy flavor, and the Thyme really brightened up the depth of the sauce, making this recipe a THUMBS UP!

Buttermilk Biscuts
A great side dish to any meal. And so easy to make, if you can make cookies you can make these. Flakie and light, these biscuts are a defenate THUMBS UP.
Rasberry Layer Cake
I didnt find a couple of things at the grocery store,(gelatin, castor sugar, and canned rasberries) so I did my best. It still tasted wonderful. Nice and light after a great Steak Meal. I have never thought of folding Melted Chocolate into Whipped Cream, and you haven't lived until you have either, making this Layer Cake a THUMBS UP!
Macaroni and Cheese with Vegetables
The Vegetables got very tender, including the Brocolli. Complete with a yummy Cheese sauce, and Pasta? Totally a THUMBS UP!
Fresh Strawberry Tart
Herby French Dip
Very deep in flavor. The Beef was super moist and soft, and seasoned perfectly(the Soy Sauce did not overpower the Beef at all, just deepened the flavor), making this tasty classic sandwich a THUMBS UP!
Shrimp and Grits
The Grits were wonderful, Cheesy and creamy. However, the Garlic was a little too strong because it wasn't cooked through in the cooking process. The shrimp didn't have enough flavor, and it was more of a soup consistency when it should have been a lot thicker, making this dish a THUMBS DOWN.
Grilled Vegetables with Polenta
Great smells came from cooking this recipe. The simple ingredients made it very flavorful. The Lemon and Olive Oil and Parsley really shined onto the Vegetables. The Polenta was super smooth(I think I should have left it a few more minutes), but it was a great combination with the Cheese, making this dish a THUMBS UP!
NOTE-- I got some Red Snapper, and flavored it with the same Olive Oil, Garlic, and Parsley marinade for the Vegetables, and baked it in the oven for 10 minutes, as a simple side.

Vegetarian Pot Pie
Super cute, and really tasty! I loved the Leeks and Mushrooms the most. I think though I should have put another Carrot in there (I love Carrots). Instead of following the Puff Pastry directions I put my own little spin on them, and just placed a rolled, cut out (to the length of the mini pot pie pan obviously), and placed it on, I think it looked super cute. The Garlic, Parsley, and Cream all contributed to making this adorable mini pot pie a THUMBS UP!
NOTE--> I don't drink Wine as most know, so it was hard to find any Pot Pie version from scratch without Wine being involved, and I was super excited to find this one. The leftovers, I just reheated in a 350 Degree oven for 35 minutes to make sure the filling was piping hot, and the Puff Pastry was nice and flakey.

Chocolate-Espresso Brownies
These brownies are super Chocolaty. The Espresso really brings out the Chocolate in these delicious Brownies, making them a THUMBS UP!

Irish Soda Bread
Nice and crispy on the outside, soft and moist in the middle. The Buttermilk and Salt really made this bread tasty, the smells throughout the house made this Bread a THUMBS UP!
Baked Lemon Tart
Super easy to make! This was actually my first Custard! And this particular Custard was very easy(no stirring over a double broiler). Very Lemony and Sweet at the same time, making this a THUMBS UP!
NOTE--> Make sure you bake this Tart over a Baking Pan lined with Tin Foil, it leaked and the Sugar burned a bit, so that way you can just throw away the Foil.

Coffee Crumb Cake
Super moist! I'm used to the pre-made, pre-stored Coffee Cakes at the Coffee shops. This one was over the top, moist, not at all dry, and wonderfully Spiced. The Cinnamon and Nutmeg were very pre-dominate flavors but weren't so overpowering, making this recipe a THUMBS UP!
NOTE--> I had to make more Topping, because what the recipe said to save wasn't nearly enough topping for me. So I mixed an extra Cup of Flour, Two Teaspoons of Cinnamon, a Teaspoon of Nutmeg, and Two Tablespoons of Vegetable Oil(I just had Canola OIl, which worked just fine), and mixed that together with my fingers until the dry ingredients got mixed with the wet, and pressed it into the Cake.

Very good, although probably going to add a bit less Red Wine Vinegar next time. This is great for on the go, and picnics or potlucks, so that's why I plated this in a container:). The Olives, Roasted Red Peppers and the crunchiness of the Barley made this a THUMBS UP!

Black-Eyed Pea and Hambone Soup
The Hambone was pretty much all the seasoning the soup needed, I just seasoned the water with Salt and Pepper. The Black-Eyed Peas were nice and soft, and the Vegetables were a wonderful addition, making this soup a THUMBS UP!
NOTE-- I added another baggie of frozen Black-Eyed Peas to make 32 oz. I cooked my own simply by washing them well under cold water, and boiling them for about 30 to 45 minutes or until tender, and froze them.

This stew was a nice change up of my favorite traditional "Chicken and Dumplings" soup. What really added to this dish was the fresh Parsley and Dried Herbs, making this Stew a THUMBS UP!.
NOTE---> A few of the Potato pieces didn't fully cook all the way through, even though I cooked it longer then the cooking time of the recipe, but everything else was wonderful. To reheat leftovers, I added a tiny amount of Beef Broth , since the Flour really thickened up the Chicken Broth while it was stored in the fridge.

The Potatoes were easy to eat, and the Tarragon (which I'd tried for the first time in this recipe) was wonderful, making this dish a THUMBS UP!
Creamy Coleslaw
Very creamy, the Scallions, along with the Carrots and Red Cabbage were what made this dish a THUMBS UP for me. This dish definitely tastes better with at least up to an hour, even more in the fridge, as the flavors will combine.
Hot Fudge Brownie Sundays
The Brown Sugar was what made the Fudge Sauce splendid (along with the Heavy Cream of course) a THUMBS UP. THe Brownies were wonderful, the Hazelnuts and BitterSweet Chocolate made them also a THUMBS UP!

The light Basil Butter, and simple Salt and Pepper really made this dish a THUMBS UP!
Orzo Pilaf With Tomatoes and Feta
This dish was nice and light, the Feta cheese flavored this dish and the Parsley really brightened the dish, and the Tomatoes gave it a great tang, making this dish a THUMBS UP!
French Chocolate Macaroons with Chocolate Ganash
The Unsweetened Coco Powder along with the sweet Chocolate filling made it not too sweet, but just sweet enough, making these little treats a THUMBS UP!

My favorite part of this dish was the Coriander Spice, it really enhanced the smokiness of the Skillet cooking, making this dish a THUMBS UP!

This seemed like a great idea. However, the Chicken was bland, since there was just Cheese added. And the Sour Cream and Green Chilies were great, but it needed something else, which unfortunately makes this a THUMBS DOWN!

The dish was actually not spicy at all as I thought it would be. The Sour Cream and Onions were my favorite part, making this dish a THUMBS UP!
Treacle Tart
Non of the flavors overpowered the other. It wasn't to Lemony or to Gingery, it was a nice balance, therefore making it a THUMBS UP!
Maggies Eggplant Parmesan
I love how the recipe included Vegetables into the sauce, and the Bay Leaf and tons of Dried Oregano gave this dish great depth of flavor. And of course any dish with this much Mozzarella Cheese, (and fried) is a THUMBS UP!
NOTE--> I accidentally put Milk instead of White Vinegar. Also the recipe called for Balsamic, but I had White, which worked fine. Honey Whole Wheat Pumpkin Bread
Very soft Loaf. I really enjoyed the spices, especially the Allspice, making this recipe a THUMBS UP!
Vegetable Lasagna
Very delicious. I used leftover Fall Vegetables from a Roast Chicken(Turnips, Carrots, Parsnips, Onion, Brussels Sprouts, and a Pumpkin.) I chopped up the rest of them instead of using frozen Vegetables that the recipe called for. This Lasagna completely changed the leftover Vegetables into a completely different dish, making this a THUMBS UP!
NOTE-- I could not fit the fresh Spinach(about three big handfuls,) and crushed Red Pepper Flakes into the picture.
