This recipe was simple, yet extremely flavorful. I loved the combination of the dried Garlic, Basil, along with the fresh Rosemary and Thyme. And I've never basted a Chicken before, and it really made it so tender it was almost hard to carve, it turned into shredded Chicken, but still incredible flavor.

This recipe was incredibly simple, as most of the marinade was done in the food processor, and marinaded in a bag. And the flavors were balanced wonderfully. My favorite part was the brownness on the meat as the temperature was increased near the end of the oven time.
NOTE-->The only thing is I'd put the Chicken Drumsticks in along with the Ribs, as they didn't cook all the way through and I had to put them back into the oven for a longer cooking period. Cookbook was :Week in a Day By: Racheal Ray The Chicken remained incredibly moist throughout(even the Thighs). I soaked the Chicken in the Buttermilk a bit longer then the recipe suggested, however I don't think it hurt the final product at all;). DELICIOUS!
From the Cookbook: The Ultimate Cooking Corse (And Kitchen Encyclopedia) By:Joanna Lorenz This was a fun dish. Vegetarian pasta: my first thought was stuffed shells! So simple and very dramatic, you could even entertain with this dish! The burst of Tomatoes and the creaminess of the Cheeses were my favorite part. Even though this says it's a "one dish meal", theres still a couple extra pots, but it is easy cleanup;).

This recipe was so tasty. I like my vegetables to taste like they've been steamed, so I cooked mine a bit longer then what the recipe directed. The sauce was wonderful, and all the flavors,(Ginger, Garlic, and Chicken Broth), came together very nicely. And BONUS! Its such a colorful pretty dish with all the Vegetables! Cookie Cheesecake Bars

Spreading the cheesecake mixture was very difficult to do on top of the cookie crumbles.. It tasted great an hour after settling, but it did keep getting better and better each time I had a piece. Thanks for this recommendation! I've never made cheesecake before, so "cheesecake bars" were a nice way to start!;) Sausage with Peppers and onions 1) Cut sausage into diagonal pieces. 2) Cut onion into long strips and break apart the strips (to relatively match the size of the bell peppers.) 3) Preheat a skillet with big sides to medium high heat. Add about two tablespoons olive oil. 4) Add sausages to the skillet with about a teaspoon to a tablespoon of pre chopped garlic(depending on how much garlic you like). 5) Cook sausages until they get a brown color, then flip and cook the other side of the sausages. Once sausages are cooked, remove to a separate plate. 6) Add onions, and bell peppers(the whole bag). Season vegetables with salt, pepper, and a few sprinkles of parsley and oregano. 7) Once vegetables have sauteed and fully cooked through, add sausages, and add about half the pasta sauce(I didnt want the peppers and sausage swimming, I just wanted to create a nice sauce..) 8) Let the sausages warm back up, while stirring them into the vegetables and sauce, then serve with bread along side. NOTE---> This is based off a recipe I wanted to use, but the origonal recipe had way to many ingredients, and wine. So I just picked ingredients in the store that were similar to the recipe, and did it my way.. This is based off a recipe from the cookbook by RACHEL RAY: WEEK IN A DAY. Cajun Chicken 1) Preheat oven to 375 degrees. 2)Cut Sweet Potato into cubes(they should look like jumbo fries). 3) Cut onion into small wedges. 4) In a 9 by 13 inch baking pan, drizzle bottom of pan with olive oil, add the vegetables and sprinkle them with salt and garlic. 5) Place chicken on top of veggies, and sprinkle liberally with Cajun Seasoning, and drizzle the chicken pieces with olive oil. 6) Cook in the oven for 30 minutes, then flip chicken, and cook another 30 minutes. Okra and tomatoes 1) Rinse and dice tomatoes(do not squeeze the juice and pulp out of the tomatoes). 2) Heat olive oil in a medium high small skillet. 3) Add okra first, and cook until no longer frozen and seeds start to come out of the okra. 4) Next add tomatoes. 5) Season the okra and tomatoes with cajun seasoning and(I decided to do this last minute which is why it's not on the ingredient picture), a bay leaf. 6) Cook stirring liberally until the mixture is almost soupy in texture. *NOTE--> I love having almost any "cajun inspired" meal with buttermilk biscuits, (cook those according to the package directions). I thought "vegetable curry" would be a perfect fit to satisfy this craving;)! Very nice warm spice(not spicy). Vegetables stayed nice and crunchy. The coconut juice was my favorite ingredient, adding a wonderful creaminess to the sauce. I figured Mango juice would be a perfect thing to serve along side. Pork Sinigang / without GreensThe winning entry this week was soup and pork so I've decided to do my own version of a traditional Filipino soup called Sinigang. This past week, I came down with a cold and felt that this soup was both good for my cold and blog. First add fresh cracked black pepper and salt into water(roughly 2quarts) and let boil. While waiting for water to boil, cut pork into little cubes (I used pork chops) , onion, potato, tomatoes and squeeze fresh lemons for fresh lemon juice. In my opinion, using fresh squeezed lemon juice and a touch of salt and pepper definitely tastes fresher than the Sinigang seasoning packets at most grocery stores! After water boils add pork to let it cook until it loses it's pink coloring. As soon as the pork is ready add the rice, potato, tomato onion and lemon juice and cook for 25 minutes stirring occasionally and adding more fresh ground pepper to taste. After rice and potato soften, let it sit for 5 more minutes and serve. As mentioned before, regular Sinigang soup packets can be super salty with unhealthy sodium, so I figured with fresh squeezed lemon juice, freshly-ground black pepper and adding a touch of salt will still make a flavorful broth. I decided to do this meal without spinach, green beans or other greens, but next time I'll add Kale to see what it could add to this flavorful soup. I find that adding a lot of crushed pepper really brings out the lemon broth which surprises me. I had pineapple and coconut juice (sipped after every few bites) to go along with this meal and it really added an element that only reminds me of my time growing up in Guam. Earlier this week, I felt a little under the weather, but after having this soup, I feel much stronger and the house smells INCREDIBLE! :) |
