2) Put vegetables into a bowl, with olive oil, salt, pepper, and chopped garlic, toss to coat all vegetables.
3) Wash chicken, including the cavity(get all the access juices out.) Dry chicken with a paper towel. In a 9 x 13 inch pan, pour olive oil on the bottom, place coated vegetables into the bottom of the pan.
4) Season chicken with salt, pepper, and (secret ingredient), cinnamon, and a little extra olive oil on top of the chicken as well.
5) Place pan with chicken and vegetables in a preheated 350 degree oven,(depending on the weight of the chicken, I had a 3 pound) for an hour and a half. An hour into the cooking process, I put a bit more olive oil on top, to keep the chicken moist.
