Chicken and Spaghetti Casserole
I've received several requests for what type of dishes you (the blog readers) wanted me to try and chose the entry request for chicken and pasta (thanks for all the suggestions!).
I saw this recipe a few times while browsing online and decided to choose this recipe from www.yummly.com which matched the ingredients from the winning meal request. You can find the recipe at: http://www.yummly.com/recipe/external/Chicken-Spaghetti-Casserole-473056
Since some condensed cream of mushroom soups have unhealthy ingredients in it, I decided to try Amy's cream of mushroom soup, which had all organic ingredients in the soup. I substituted regular spaghetti noodles with whole wheat noodles and chopped up the noodles to make it more bite-size friendly. I had extra garlic cloves and fresh sage leaves from previous recipes and decided to add them to the casserole.
Overall good creamy consistency with the mushroom soup and melted cheese, but spaghetti noodles in a casserole will need some time to get used to. Garlic and sage definitely did not overpower the recipe's overall flavor, but accented quite nicely.
Oh and by the way.... Apple Peach Cider = Addiction waiting to happen.
