Pork Sinigang / without Greens
First add fresh cracked black pepper and salt into water(roughly 2quarts) and let boil. While waiting for water to boil, cut pork into little cubes (I used pork chops) , onion, potato, tomatoes and squeeze fresh lemons for fresh lemon juice. In my opinion, using fresh squeezed lemon juice and a touch of salt and pepper definitely tastes fresher than the Sinigang seasoning packets at most grocery stores!
After water boils add pork to let it cook until it loses it's pink coloring. As soon as the pork is ready add the rice, potato, tomato onion and lemon juice and cook for 25 minutes stirring occasionally and adding more fresh ground pepper to taste. After rice and potato soften, let it sit for 5 more minutes and serve.
As mentioned before, regular Sinigang soup packets can be super salty with unhealthy sodium, so I figured with fresh squeezed lemon juice, freshly-ground black pepper and adding a touch of salt will still make a flavorful broth. I decided to do this meal without spinach, green beans or other greens, but next time I'll add Kale to see what it could add to this flavorful soup. I find that adding a lot of crushed pepper really brings out the lemon broth which surprises me. I had pineapple and coconut juice (sipped after every few bites) to go along with this meal and it really added an element that only reminds me of my time growing up in Guam. Earlier this week, I felt a little under the weather, but after having this soup, I feel much stronger and the house smells INCREDIBLE! :)
