I've recently been homesick for Mississippi where I spent part of my life and what I remember the most about Mississippi is that with almost every meal(or potluck) there were Hush Puppies (deep fried yellow cornmeal) and Shrimp Po' Boy Sandwiches. With this inspiration, I wanted to make a spin on Po' Boy Sandwiches and turn them into sliders.
1. Fresh breads like biscuits always complimented potlucks, so I thought that Buttermilk biscuits would be awesome in both size and flavor for the sliders. For this we used biscuit dough that we baked in the oven.
2. To batter the shrimp, I used Louisiana spice blend mixed with whole wheat flour and lemon zest. I battered all the shrimp, let it sit while the oil got hot and fried all of them until fully cooked.
3. For the sauce to spread on both sides of the biscuit halves, I mixed lemon juice, mayonnaise and fresh crushed pepper.
After the biscuits have been baked, shrimp fried and sauce made, I assembled the Po'Boy Sliders by spreading the sauce on both halves of the biscuit, placed Havartti Cheese on the bottom biscuit, followed by 6 shrimp and topped with tomato slice.
4. For the hush puppies I used a basic recipe and fried them in a different pot. After I pulled them out of the oil, I sprinkled plenty of the spice blend to top off the hush puppies with flavor.
The Shrimp Po' Boy Sliders w/ Hush Puppies truly brought back amazing memories of Mississippi for me. The flavors from the sauce works well with the crispness of the fried shrimp and soft biscuit. The sliders were just a wonderful bite all together and hush puppies topped off the meal to a delightful end. Fresh lemonade was a great side kick to this amazing meal, but an "Arnold Palmer" on the rocks would have been eve
