1) In a large skillet with high edges, heat about three tablespoons olive oil over medium high heat.
2) Add mushrooms and a tablespoon of pre-chopped garlic. Sautee mushrooms till they are fully cooked through.
3) Add spinach(you may have to cook in batches), and cover with a lid until spinach is fully cooked, season with salt, pepper, and nutmeg(I accidentally left out this ingredient in the picture).
4) Level out vegetables into an even layer, and crack five eggs over spinach. Season eggs with salt, cover the pan with the lid until the clear egg liquids have turned white.
